This easy air fryer bitter gourd is crispy, light, and full of flavor. Onion adds a gentle sweetness that balances the bitterness perfectly. Simple, quick, and made with just a few ingredients.

Ingredients

  • 2 medium bitter gourd (sliced into half-moons)
  • 2 green chilies (chopped)
  • 1 medium onion (sliced)
  • tablespoon turmeric powder
  • salt to taste

Instructions 

  • To reduce extra bitterness, here’s a quick tip: after slicing the bitter gourd, rub it with a little salt. Let it sit for 15 minutes, then lightly rinse and squeeze out the excess water.
  • Preheat your air fryer to 350°F (180°C) for 2 minutes.
  • Add the sliced bitter gourd, chopped chilies, and sliced onion to the air fryer basket. The onion helps balance the flavor. Add turmeric powder, sprinkle salt to taste, and spray oil to coat everything evenly.
  • Cook in two batches. The air fryer needs space for air to circulate and crisp properly. Set air fryer temperature for bitter gourd to 350°F (180°C) and cook for 12 minutes. Close the basket and start cooking.
  • After 8 minutes, shake the basket to mix everything well, then continue cooking.
  • If you want extra crispy texture, increase the temperature to 400°F (200°C) for the last 2 minutes.
  • Your crispy bitter gourd is ready to serve!
