Crunchy, spiced soybean roasted in the air fryer with just a light spray of oil. A quick, protein rich snack ready in 21 minutes.

Ingredients

  • 1 cup soybean
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon ginger powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon turmeric powder
  • salt to taste
  • 1 teaspoon oil (for spray)

Instructions 

  • Soak 1 cup soybean in water for 15 minutes, until it puffs up nicely. Drain the soybean well and squeeze out the extra water with your hands.
  • In a bowl, add the soybean, paprika, black pepper, ginger powder, garlic powder, turmeric powder, and salt. Spray with oil and mix well using a spoon or your hands, whichever feels easier.
  • Preheat your air fryer to 360°F (180°C) for 2 minutes.
  • Add the soybeans to the air fryer basket in a single layer. Don’t overcrowd it. Air fry at 360°F (180°C) for 6 minutes, until golden and crunchy.
  • Serve with sauces, or eat it plain. It also works well as a breakfast option.

Notes

  • Squeeze out extra water after soaking so the soybean crisps instead of steaming.
  • Mix spices in evenly so every bite has the same flavor.
  • Keep soybean in a single layer in the basket for even crunch.
  • Always preheat the air fryer before adding the soybean.
  • Check a minute or two early since air fryers vary in actual temperature.
