Air Fryer Masala Baby Potatoes (Easy & Crispy)

Baby potatoes are boiled soft, coated in a homemade Indian masala, then air fried until crispy without any deep frying. Ready in under 25 minutes with simple pantry spices.

Ingredients

  • 250 gm (8 oz) baby potatoes
  • 1 ½ teaspoon besan
  • ¼ teaspoon Kasturi methi
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin powder
  • teaspoon turmeric powder
  • 2 pinches food colour
  • 1 teaspoon lemon juice
  • 1 tablespoon oil
  • ½ teaspoon paprika
  • ¼ teaspoon garam masala powder
  • Salt to taste

Instructions 

  • Boil the potatoes: Wash the baby potatoes and add them to a pressure cooker with 1 glass of water. Cover with the lid and cook for 3 to 4 whistles, then turn off the heat and let it cool down on its own.
  • Peel the potatoes: Open the cooker once it's cooled, and peel each potato one by one. Set them aside in a bowl.
  • Mix the masala: In a mixing bowl, add the besan, black pepper, cumin powder, turmeric powder, salt, paprika, lemon juice, Kasturi methi, food colour, and garam masala powder. Whisk it all together with a spoon until it's well combined.
  • Coat the potatoes: Add the boiled potatoes to the masala mix and use your hands to coat every potato evenly with the spices.
  • Preheat the air fryer: Set your air fryer to 200°C (400°F) and let it preheat for 3 minutes.
  • Arrange in the basket: Spray the air fryer basket with oil, then place the potatoes in a single layer. Don't overcrowded them on top of each other.
  • Air fry: Cook at 200°C (400°F) for 7 minutes, tossing the potatoes halfway through and spraying with a little more oil so they crisp up on all sides.
  • Serve: Take the basket out and serve the potatoes hot with your favorite sauces.

Notes

  • Use potatoes similar size so they all cook evenly.
  • Adjust spice levels lower if serving to kids.
  • Keep potatoes in a single layer in the basket for the crispiest result.
  • Always preheat the air fryer before adding the potatoes.
  • Toss the potatoes halfway through cooking for even crisping on all sides.
