Boil the potatoes: Wash the baby potatoes and add them to a pressure cooker with 1 glass of water. Cover with the lid and cook for 3 to 4 whistles, then turn off the heat and let it cool down on its own.
Peel the potatoes: Open the cooker once it's cooled, and peel each potato one by one. Set them aside in a bowl.
Mix the masala: In a mixing bowl, add the besan, black pepper, cumin powder, turmeric powder, salt, paprika, lemon juice, Kasturi methi, food colour, and garam masala powder. Whisk it all together with a spoon until it's well combined.
Coat the potatoes: Add the boiled potatoes to the masala mix and use your hands to coat every potato evenly with the spices.
Preheat the air fryer: Set your air fryer to 200°C (400°F) and let it preheat for 3 minutes.
Arrange in the basket: Spray the air fryer basket with oil, then place the potatoes in a single layer. Don't overcrowded them on top of each other.
Air fry: Cook at 200°C (400°F) for 7 minutes, tossing the potatoes halfway through and spraying with a little more oil so they crisp up on all sides.
Serve: Take the basket out and serve the potatoes hot with your favorite sauces.
