  • Besan (gram flour): This is what helps the spice mix stick to the potatoes and adds to the crispy texture once air fried.
  • Kasturi methi: Dried fenugreek leaves that add a slightly bitter, earthy flavor you’ll recognize from a lot of Indian curries.
  • Food colour: This is only for a deeper orange color, skip it if you don’t have any and the taste won’t change.
  • Lemon juice: A small splash cuts through the spice mix and adds a bit of tang to the masala. White vinegar also work fine.

How to Make Air Fryer Masala Baby Potatoes

Only two things take real time here: boiling the potatoes and letting the air fryer crisp them up.

1. Boil the potatoes: Wash the baby potatoes and add them to a pressure cooker with 1 glass of water. Cover with the lid and cook for 3 to 4 whistles, then turn off the heat and let it cool down on its own.

2. Peel the potatoes: Open the cooker once it’s cooled, and peel each potato one by one. Set them aside in a bowl.

3. Mix the masala: In a mixing bowl, add the besan, black pepper, cumin powder, turmeric powder, salt, paprika, lemon juice, Kasturi methi, food colour, and garam masala powder. Whisk it all together with a spoon until it’s well combined.

4. Coat the potatoes: Add the boiled potatoes to the masala mix and use your hands to coat every potato evenly with the spices.

5. Preheat the air fryer: Set your air fryer to 200°C (400°F) and let it preheat for 3 minutes.

6. Arrange in the basket: Spray the air fryer basket with oil, then place the potatoes in a single layer. Don’t overcrowded them on top of each other.

7. Air fry: Cook at 200°C (400°F) for 7 minutes, tossing the potatoes halfway through and spraying with a little more oil so they crisp up on all sides.

8. Serve: Take the basket out and serve the potatoes hot with your favorite sauces.

  • Pick even sized potatoes: Always try to grab baby potatoes that are close to the same size. That way, they all boil and cook through at the same time.
