  • Potato: I used just 3 white potatoes for this recipe and cut them into halves to reduce the cooking time. Any potato works fine here, but if you are using medium or large potatoes, make sure to cut them into halves so they cook evenly in the air fryer.
  • Onion: I add fresh chopped onion at the very end. It gives a nice crunch and fresh flavor to the bharta. Finely chopped onion mixes better and balances the soft mashed potatoes really well.
  • Garlic: Adding roasted garlic helps elevate the overall flavor. Once roasted, the garlic becomes soft, slightly sweet, and much less sharp compared to raw garlic. It gives the bharta a deeper and more homemade taste.
  • Green Chilli: I added roasted mashed green chili because it gives a more authentic flavor. You can also use fresh chopped green chili if you like a sharper spicy taste. Red chili powder works fine too, but roasted green chili gives a smoky and traditional-style flavor.
  • Seasoning: I used only salt and black pepper for simple and authentic taste and texture. But of course, you can always add your favorite herbs or seasonings based on your personal preference.

How To Make Aloo Bharta in Air Fryer

1. First, wash the potatoes properly. In order to less cooking time, cut them into halves. Use a fork or knife to make small cuts on the top side of the potatoes. This helps them cook faster and evenly.

Preheating the air fryer is optional for this recipe. Actually, it is not really necessary.

2. Place the cut potatoes, garlic cloves, and green chilies in the air fryer basket. Air fry the potatoes for about 35 minutes at 180°C (350°F). Cook the garlic and green chilies for only about 10 minutes.

3. After 10 minutes, remove the garlic and green chilies from the basket. Let the potatoes continue cooking until fully soft. The potatoes should cook evenly, otherwise mashing can become difficult.

4. Now peel the garlic and remove the stems from the green chilies. Mash them while they are still warm because they mash more easily when hot.

5. Transfer the mashed garlic and chilies to a large bowl. Add chopped onion. Peel the cooked potatoes and add them to the bowl as well. Then add black pepper and salt. Mix everything nicely.

6. If you want, you can add melted butter, which is totally optional. But I like adding mustard oil because it gives a nice aroma and authentic flavor to the bharta. This is more like our Indian-style chokha taste. You can also swap mustard oil with butter if you prefer.

7. Mix everything well and serve hot with rice or chapati.
